A traditional farmhouse cheese with an earthy character. Carrick has a deep, nutty and earthy flavour. The aroma is rich and earthy, and the texture is firm and with a creamy finish. It will dry naturally with age. Made with raw, organic milk from their cow with calf dairy farm. Winner of the Sean Wilson Trophy at the 2024 Mid-Somerset Cheese Awards. The Ethical Dairy cheeses are made with vegetarian rennet with traditional methods used throughout. The cheeses are matured on wooden shelves and are turned weekly by hand.
